Here's a simple Bailey's ganache that you can use to fill cupcakes or cakes. I used it with a Malt Chocolate icing and the combination was dericious.
1 part cream, 1 part baileys, 2 parts semi sweet chocolate chips and a pinch of salt. I used 1/2 cups but you could make as much or as little as you need.
Nuke for 30 secs in the microwave and stir, repeat until smooth.
