This is a delicious buttercream icing that is easy to work with that isn't overly sweet. This recipe is adapted from the Cupcake Project blog.
HONEY BUTTERCREAM ICING
1 cup unsalted butter
4 cups icing sugar
1/2 cup honey
1/2 cup full fat sour cream
1 tablespoon vanilla
Whip the butter for three minutes on high until light and fluffy.
Add in the powdered sugar, bit by bit.
Mix in honey, vanilla and sour cream.
Chill, then spread or pipe as desired.
